Knowing where products come from and how they were made is an integral part of our ethos. So, you can only imagine our delight when we connected with the legends at Lord Byron Distillery. We already knew we loved their booze but what we didn’t know was their ongoing commitment to distilling almost exclusively with ingredients collected from their family farm in Byron’s hinterland or sourced from Northern Rivers growers.

The Balcony bar team were keen to learn more about the distilling process and the crew down at Lord Byron said “why don’t we collaborate and make your own blend?”  We jumped at the offer and before long we found ourselves ten minutes up the road ready to make our very first Balcony Bar & Oyster Co. Gin! We made five different variations & chose the best of the bunch then worked together to fine-tune the flavours.

Taste the bay

The recipe is not too dissimilar to our food ethos, pure and simple, allowing the quality ingredients and local flavours speak for themselves. Moku Gin is a native double Juniper gin.  First we steep the gin for 24 hours with Organic Juniper, we then amplify this flavour Juniper vapours infused during the distillation process.

The Myrtle and Cassia bring depth to the gin, with a touch of salinity from the Saltbush, whilst the Pepperberry brings a heavy native note to a quick finishing palate.

The discerning drinker will pick up on a slightly salty taste, like licking your lips after an ocean dip.  This is our ode to Byron’s coastal backyard and the surrounding areas we as a community share with the original custodians of the land.

Aloha spirit

We decided to name our unique spirit after a special someone who personified the ‘Aloha Spirit’.  Aloha meaning more than just a greeting, “meaning the coordination of mind & heart within each person, each person must think and emote good feelings to others.”

And who better to represent the Aloha Spirit than Hawaiian surfer Duke Kahanamoku, who famously brought surfing to Australia in 1915. Without a doubt, Duke’s first ride carved the surf community and culture we honour and love here in Byron Bay.

We feel humbled to have had such an incredible experience connecting with like-minded people to create this unique and delicious blend. It’s readily available now on our Balcony, Moku makes for an easy sipping  G’n’T which can be garnished with anything native (Finger Lime, Lemon Myrtle, Cinnamon Myrtle, Strawberry Gum) or perfect for Balcony’s lighter Gin cocktails.
