Menemen (Turkish Eggs) in Byron Bay!

Pronounced many men, these Turkish eggs are a one dish wonder that will leave you wanting more.
If you cant get to Balcony every weekend, try making them for yourself at home!
TURKISH EGGS


You will need – poached eggs, roasted & peeled red capsicums, shredded red onion, garlic cloves, olive oil, chick peas, toasted cumin & smoked paprika
Do this – in a heavy pot sweat the cumin seeds, paprika, onion & garlic. Add peppers, olive oil and chick peas and slowly cook down until flavours mixed.
Serve yourself generous portion, top with 2 poached eggs and garnish with fresh coriander, smoked paprika, tomato pickle and a side of crusty sourdough.
